Baked Scallop Dip

This is an extremely easy recipe to make - one we serve for the Feast of the Seven Fishes.

Ingredients

  1. 2 Tbs extra virgin olive oil
  2. 2 cloves of garlic, minced
  3. 2 Tbs fresh lemon juice
  4. Flat leaf Italian parsley, chopped
  5. 1 lb bay scallops
  6. Salt & Pepper
  7. 4 Tbs breadcrumbs
  8. 2 tsp unslated butter

Preparation

Preheat oven to 400°.

Into a small bowl place the olive oil, lemon juice, garlic, parsley, and scallops. Season with Salt & Pepper. Stir well to combine.

Spray 4 ramekins with cooking spray. Using a slotted spoon place enough scallops into each ramekin so that they’re 3/4 full or evenly divided between the ramekins. Top with 1 tablespoon breadcrumbs per ramekin (small) and a 1/2 teaspoon butter each.

Bake until golden and bubbly, approximately 10 - 15 minutes. Serve with Ritz crackers.
