Panna Cotta with Fresh Berries

Tony and I ate this all over Italy. It's a perfectly light ending to a heavy meal.

Ingredients

  1. 1 cup whole milk
  2. 1 tablespoon unflavored gelatin
  3. 3 cups whipping cream
  4. 2 tablespoons vanilla extract
  5. 1 tablespoon sugar
  6. 3 tablespoons honey
  7. pinch of salt
  8. 2 cups fresh berries (strawberries, blueberries, raspberries)

Preparation

Place the milk in a small bowl. Sprinkle with gelatin. Let stand for 3-5 minutes to soften the gelatin.

Pour milk mixture into a heavy saucepan and sit over medium heat until the gelatin dissolves but the milk does not boil, about 5 minutes. Add the cream, honey, sugar, and salt. Stir until the sugar dissolves, 5-7 minutes. Remove from the heat.

Pour into martini glasses so they are half full. Cool slightly, then refrigerate at least 6 hours. To prepare the berries, combine them in a bowl with 1 tablespoon sugar and 1 teaspoon balsamic vinegar. Let sit for at least 30 minutes before serving.

Serve panna cotta chilled and topped with the berries.
