My dad loved this dessert and I tried to make it for him every summer visit. Seeing peaches always makes me think of him!

Ingredients
- 2 cups all-purpose flour
- 1/4 cup plus 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, cut small
- 1 large egg
- 2/3 cup heavy cream
- 10 ripe peaches, pitted and sliced
- 1/4 cup cornstarch
- 2 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- vanilla ice cream, for serving
Preparation
Preheat oven to 375°F. Place the peaches, cornstarch, brown sugar, and cinnamon in a large bowl. Toss until well combined. Pour into a 9x13-inch baking dish.In a separate bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. In another bowl (or a measuring cup), whisk together the egg and heavy cream.
Slowly add this mixture to the dry ingredients. Mix with a fork until dough comes together. Turn dough out onto a lightly floured board and roughly shape into a 12 inch log.
Using a bench scraper or knife, cut log into 12 equal portions. Place balls of dough on top of peach mixture. Sprinkle with remaining 2 tablespoons sugar.
Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbly. Let cool slightly before serving. Serve warm with vanilla ice cream.
