Gram's Meatballs

You can add these to your homemade sauce, or just a simple marinara. Try adding hot sausage to the sauce!

Ingredients

  1. 3 lbs ground beef
  2. 4 eggs
  3. 1 & 1/4 cup breadcrumbs
  4. 1/4 cup milk
  5. 1/4 cup onion, cut small
  6. 3 cloves of garlic, minced
  7. 1 Tbs oregano
  8. 1/4 - 1/2 cup fresh parsley
  9. 1 cup ricotta cheese
  10. 1 cup grated romano cheese
  11. Salt, black pepper, cayenne pepper to taste

Preparation

Mix all ingredients throughly in a bowl. Roll about 2 tbsp of the mixture into a ball. Sauté in a pan with olive oil gently until browned on all sides. Drain grease. Place in a baking dish and bake at 350 degrees for 30 minutes.

If you are adding the meatballs to sauce, add them and simmer for at least 30 minutes to an hour. If you are serving them by themselves, bake them in the oven for 30 minutes at 350°.

Serve with pasta and homemade sauce, or by themselves with a side of marinara sauce.
