This is great for a big crowd and really easy to make.

Ingredients
- Pork roast (6 - 6 1/2 lb)
For Rub:
- 4 Tbs butter
- 2 Tbs dijon mustard
- 2 Tbs dried sage
- 1 Tbs corse salt
- 2 vidalia onions (8 wedges)
- 2 golden delicious apples or bosc/anjou pears
For Sauce:
- 1/3 cup sour cream
- 1/3 cup mayonnaise
- 1 Tbs chopped scallions
- 1 Tbs dry mustard
- 1 1/2 Tbs vinegar
Preparation
Preheat oven to 450°.
Make rub and coat the roast with it. Roast fat side up for 15 minutes then turn oven down to 350° and roast approximately 1 hour and 20 minutes (internal temperature of 150°). Remove from oven and allow the meat to rest for at least 10 minutes.
Combine all sauce ingredients and mix well.
Carve pork into thin, diagonal slices, and serve with sauce.
Serves 12.
