This marinade is the bomb! I also use the marinade for skirt steak when I make black beans and rice.

Ingredients
- 3 - 4 lbs frying chicken
- vegetable oil for frying
For Marinade:
- 3 cloves of fresh garlic, crushed and minced
- 1 tsp salt
- 1/4 cup olive oil
- 1 Tbs malt vinegar
- 1 tsp freshly ground black pepper
- 1 Tbs sweet, mild paprika
- Juice of 1/2 a lemon
- Juice of 1/2 a lime
- 1 packet Sazon Goya brand seasoning with cilantro and achiote
Preparation
Cut the chicken into 16 pieces discarding the wing tips and extra fat. Marinate the chicken overnight in pureed mixture.
Bake the chicken (in the marinade) at 400° for 30 - 40 minutes. Remove the chicken from marinade and deep fry it in light vegetable oil heated to 350° for 3 minutes.
