This is Dad's version: San Marzano is a must! Add pepperoni to taste like Aunt DeeDee's version, add a Tablespoon of sugar to taste like Grandma's.

Ingredients
- 1 lb each of hamburger, Italian sausage, pork, and/or pepperoni
- 1 medium onion, finely chopped
- 5 cloves of garlic (or more), minced
- 2 Tbsp tomato paste
- 3 28 oz large cans of tomato puree (San Marzano)
- 1 16 oz can of chopped tomatoes (San Marzano)
- 2 Tbsp each of thyme, oregano, parsley, basil
- 1 Tbsp red pepper flakes
Preparation
First, brown your meat together, remember to season each step. Add salt and pepper, oregano and red pepper flakes. Drain grease.
Sauté onion and 2 Tbs of olive oil. Add garlic, tomatoes, puree, herbs, and S&P to taste. Add a cup of water or wine. Bring to a slow simmer, then add the cooked meat. Let simmer as long as you need, adding water the longer you leave it on the stove.
*For a creamy/orange sauce, add a half of block of cream cheese with 5 minutes left in your simmer.
Cook spaghetti according to package instructions and drain well. Put hot pasta into a bowl and toss until coated with sauce. You must toss spaghetti in sauce!
Serve with pecorino cheese, Italian bread, and red wine, of course.
