I made this salad for Ronnie the first time he visited me in Palm City. He was on the Atkins diet and couldn't get enough of it. He even called afterwards for the recipe so he could make it for a date he was having for dinner.

Ingredients
- Fresh spinach
- 1 cup sliced mushrooms
- 1/4 cup green onions
- 4 slices of bacon
- 1 hard boiled egg
- Crumbled feta cheese
- Balsamic Dressing
For Balsamic Dressing:
- 1/2 cup vegetable oil
- 3 Tbs balsamic vinegar
- 2 Tbs sugar
- 1/4 tsp dried mustard
- 1/2 granulated garlic
- Salt and pepper
Preparation
Whisk all dressing ingredients together in a bowl. Arrange salad on serving plate, crumble feta over.
