Turkey Club Pasta Salad with Lemon Basil Dressing

I got this recipe from Vickie after she brought it to a BBQ lunch at Kim Roland's house. The young kids will eat it too.

Ingredients

  1. 1 package (7 oz) small pasta shells
  2. 6 slices bacon, crisply cooked
  3. 1 1/2 cups fully cooked smoked turkey, diced/cubed
  4. 1 1/2 cups romaine lettuce, chopped into bite-sized pieces
  5. 1 cup (4 oz) shredded Swiss cheese
  6. 2 plum tomatoes, chopped
For Dressing:
  1. 3/4 cup light mayo
  2. 2 Tbs FRESH basil, chopped
  3. 1 tsp grated lemon peel
  4. 1 tsp lemon juice

Preparation

Mix together dressing ingredients. Cook and drain pasta as directed on box. Crumble bacon. Reserve 2 tablespoons for topping.

Mix pasta, dressing, bacon, adn remaining ingredients. Cover and refrigerate 1-2 hours to blend flavors. Sprinkle reserved bacon.
