Sophisticated Green Bean Casserole

A sophisticated twist to a Thanksgiving classic.

Ingredients

  1. 2 lbs green beans
  2. 1 large onion
  3. 1 small pepper
  4. 6 oz fresh button mushrooms, sliced
  5. 3 oz cream cheese
  6. 3 oz goat cheese
  7. Olive oil
  8. Soy sauce or balsamic vinegar
  9. Brown sugar
  10. Bread crumbs

Preparation

Preheat oven to 375°.

Start with fresh whole beans, trimmed, or frozen green beans. Cook in a small amount of boiling water — just enough to cover — for about 3 minutes. In a casserole combine green beans with fresh button mushrooms and sliced red sweet peppers. Toss with olive oil and soy sauce or balsamic vinegar to coat. Roast for 15 minutes.

Sweeten onion wedges by sautéing in olive oil and brown sugar until tender. Toss with dry bread crumbs to coat for classic onion ring crispiness. Toss with warm vegetables and place in baking dish. Top with onions.

Bake in 400° oven 5-8 minutes just until heated through and onion rings are crispy. Garnish with snipped fresh parsley. If you want a sweeter taste, use more cream cheese than goat cheese. If you would like it tangier use more goat cheese than cream cheese.
